Snow Day Celery Soup

Serves 5
5 minutes preparation time
25 minutes cooking time

2 tablespoons butter
5 celery stalks, chopped
1 medium onion, chopped
3 medium potatoes, chopped
1 teaspoon dried thyme
salt and pepper to taste

Melt the butter in a soup pot and add the celery and onion. Sauté until the vegetables begin to soften, about 5 minutes.  Add the thyme and potatoes and stir briefly. Cover the vegetables with water bring the soup to a boil.

After the soup boils, reduce the heat, and simmer until the vegetables are soft, about 20 minutes. While the soup is still hot, blend it with an immersion blender. Add salt and pepper to taste.
