I have to practice serious will power at the farmers' market this time of year to keep from buying everything in sight. There is so much potential in that bright green bounty.
Sometimes I ride my bike for the exercise and the good of the planet, yes, but also to restrict myself to whatever fits in the basket. I can always fit some in a back pack, too, though. And hang a bag off of each handlebar. Watch out if you see me coming. My balance isn't that great to begin with, and with a trail-a-bike on the back and who knows what hanging off of me, you may just want to wave from the other side of the street.
Last week, Evensong Farm was selling beautiful heads of watercress all wrapped up in newspaper like a country wedding bouquet. I couldn't resist. I thought the pepperiness of the watercress would be tasty with a creamy blue cheese dressing so I made this super quick dressing to go on top of it. That's it. Just cress and creaminess. A delicious spring salad.
Did my children eat it? No way. Well, actually, Olivia, with her palate for strong flavors, did, but the other two just wrinkled their noses. Oscar may have even gagged. Oh well. More for the rest of us.
Watercress with Creamy Stilton Dressing
1/4 teaspoon salt
a few grinds of fresh pepper
3 tablespoons sour cream
2 teaspoons white wine vinegar
2 ounces finely crumbled Stilton (about 1/4 cup)
1 large bunch watercress (about cups), washed and torn or cut into bite-sized pieces
Whisk together the salt, pepper, sour cream, and white wine vinegar in a small bowl. Add the Stilton and mix again.
Serve the watercress onto individual plates and drizzle the dressing over the top. Serve immediately.

I'm loving the mental picture of you riding home from the farmers' market. This is a clever idea. I wind up making the 2 year old walk back to the car, because the stroller is full of beets, berries, and potted plants.
