We went strawberry picking last weekend. With three adults and three children, we filled up three flats in no time. We have been eating strawberries all week, given some away, made strawberry preserves (with and without lemon), and made strawberry smoothies. I have also made several strawberry pies, although the recipe is still a work in process and not yet worthy of sharing.
But my favorite strawberry treat of the week is strawberry soda, an idea I took from Culinate's rhubarb soda, mentioned on SouleMama. It is a snap to make and the results are light and refreshing. In Olivia's words, "Drinking strawberry soda is like a little slice of heaven." Here is what else they had to say:
Oscar: "It's nutritious and it tastes good, too!"
Olivia: "It tastes so much better than the cafeteria's spoiled milk."
Chloe: "It was good 'cause of the fuzziness of it."
So there you have it. It's good stuff. I'm wondering, too, whether it could be the base for a good cocktail. Any ideas?
Makes 8 8-ounce drinks
10 minutes preparation time
20 minutes cooking time, plus time for chilling
1 1/2 cups strawberries, cleaned and hulled
1 cup sugar
1 1/2 cups water
soda water
Make a syrup by mashing the strawberries in a small pan with the sugar and water. Bring the mixture to a boil and let it simmer for about 15 minutes. Or a few more. Pour the mixture through a sieve and set it aside to cool.
When you are ready to serve, mix 1/4 cup of the strawberry syrup with 2/3 cup of soda water. Add lots of ice and a strawberry as a garnish. Enjoy!

How about a Strawberry Soda with a splash of Absolut in a flavor like Citron, Raspberri, or APeach? I'm game for a night of taste testing any time you'd like a second opinion! :)
