This combination sounds wonderful, except I do not have a pressure cooker!

Jamie, you can still make it the old fashioned way! You can follow this recipe: http://www.hidethecheese.com/hide_the_cheese/2009/02/sage-risotto-with-wild-mushrooms.html for the timing and proportion of rice to broth. I would still add the saffron, artichokes, and lemon zest at the beginning and the peas at the end.

i have the same fears about my pressure cooker. something ominous about it. but i LOVE the idea of 7 minute risotto. can't wait to try it.

i keep thinking i should get one of these things, but then i'm like what would i do with it! hmmm, might need to get one. smitten kitchen seems to be using it a lot these days too.

As you know, I love, love, love my pressure cooker, and often take it on vacation with us.
Did I ever tell about the time I was holding the cat and my mother, thinking the (old-fashioned-without-a-lock) pressure cooker wasn't up to pressure opened it to add one more ingredient. Memorable, to say the least!
