As I have mentioned before, one of our favorite summer meals is tomato and mozzarella salad. Of course we wait until really good tomatoes are available at the farmers' market (or in our garden!) and use the best mozzarella we can find. When we had the salad for the first time this season, Olivia said, "Oh, I've waited so long for this!" Yes, you have, sweetie. Waiting for those tomatoes to come in can seem to take forever, especially in the long years of a child.
But now tomatoes are here with a vengeance. My goal is to eat so many of them that by the time the summer ends, I am happy to see them go. It has never worked before, but maybe this will be the year.
This recipe is a variation on that standard tomato-mozzarella salad. With perfectly ripe peaches thrown in, it is quintessentially summery. The peaches add sweetmess, and the balsamic vinegar adds a mellow, sweet, tangy flavor. The balance of the flavors works extremely well together.
I have to confess that Olivia was the only child who loved this salad as much as Gabe and I did. Oscar was not wild about the one bite that I cajoled him into trying, and Chloe wouldn't even have a taste. But I loved the combination of flavors so much that I wanted to pass it on. And maybe in some households, the appeal of peaches for dinner will be enough to entice the children?
Peach, Tomato, and Mozzarella Salad
Serves 6 as a salad
15 minutes preparation time
2-3 medium-sized ripe tomatoes, sliced into rounds
2-3 medium-sized ripe peaches, sliced into rounds
1 pound fresh mozzarella, sliced into rounds
a few sprinkles of salt
5-6 basil leaves, torn or cut into thin strips
balsamic vinegar
Layer alternating slices of tomato, peach, and mozzarella on a large platter or plate. Sprinkle with salt and basil, and drizzle with balsamic vinegar.
