This snowstorm took me completely by surprise. I know it was predicted to blanket the entire northeast, but we have had a number of predictions this winter that did not come true. We kept sleeping with our pajamas inside out, getting our hopes up, only to be repeatedly disappointed. So I was very surprised to see several inches of snow covering the ground and each tree branch this morning. Beautiful!
I wanted to give the children a hot soup for lunch because I knew they would be cold after playing in the snow all morning, but we had not yet done our grocery shopping for the week and we had limited resources. We did have some staples, though, so I decided to make a quick celery soup. I remember my mother making a similar soup for us on a snowy trip to Colorado, and it was delicious and comforting.
I know celery soup doesn't sound very exciting, but this soup is thick, mild-flavored, and perfect after a morning outside. Although I got a few initial protests -- "I don't want soup" -- in the end, each child ate three bowls.
Serves 5
5 minutes preparation time
25 minutes cooking time
2 tablespoons butter
5 celery stalks, chopped
1 medium onion, chopped
3 medium potatoes, chopped
1 teaspoon dried thyme
salt and pepper to taste
Melt the butter in a soup pot and add the celery and onion. Sauté until the vegetables begin to soften, about 5 minutes. Add the thyme and potatoes and stir briefly. Cover the vegetables with water bring the soup to a boil.
After the soup boils, reduce the heat, and simmer until the vegetables are soft, about 20 minutes. While the soup is still hot, blend it with an immersion blender. Add salt and pepper to taste.
